The Perfect Mother's Day Feast: Herb-Crusted Roast Beef and Pinot Noir

Mother's Day is the perfect opportunity to show your mom how much you love and appreciate her. While gifts and flowers are always appreciated, nothing beats a home-cooked meal made with love. This year, make Mum's day unforgettable with a classic and delicious Herb-Crusted Roast Beef paired with a delightful Pinot Noir.

Why Roast Beef and Pinot Noir?

Roast beef is a special occasion dish. Tender, juicy, and full of flavour, it's easy to impress even the pickiest eaters. Pinot Noir is a versatile red wine known for its bright fruit flavours and smooth tannins, making it a fantastic pairing for hearty beef dishes.

Herb-Crusted Roast Beef Recipe

This simple recipe uses a mixture of herbs and Dijon mustard to create a savoury crust that seals in the juices of your roast.

Ingredients:

  • 1-1.2 kg beef roast
  • 2 tbsp Dijon mustard
  • 1 tbsp mixed dried herbs
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 230°C
  2. Pat roast dry. Rub with Dijon mustard, herbs, salt, and pepper
  3. Heat olive oil in a roasting pan. Sear roast on all sides
  4. Roast until the desired doneness (use a meat thermometer) Ideal temperatures:
    • Rare: 125°F (52°C)
    • Medium-rare: 135°F (57°C)
    • Medium: 145°F (63°C)
  5. Let rest for 10 minutes before slicing ("resting meat")
  6. Serve with your favourite sides like roasted vegetables, creamy mashed potatoes, and a glass of Caldera Pinot Noir

Tips:

  • Let the roast come to room temperature before cooking for the best, most even results
